Waste, we all hate it, especially in cake making. You can't always predict how much you'll need for your cake and so you are often left with waste. A Bit About Flower Paste

Flower paste is also known as gum paste or florist paste, confusing we know, but that's just the way it is in the cake world.

Flower paste is made up of fat, sugar, egg whites and natural gum. It is safe to eat but we're not sure you'd actually like to eat it. 

Flower Paste represents the delicate leaves and petals so well as it is a paste that can be rolled super thin and sets really hard. It is therefore perfect for all your flower modelling needs. 

Flower paste dries and sets quickly so is perfect for layering and creating your flowers. However, that does mean you have to store it carefully, in an air free sandwich bag and then a tupperware to ensure it is completely sealed. Otherwise it dries, becomes brittle and therefore unusable.

Is It Not Just the Same as Sugar Paste?

Noooope, you would not want to use flower paste to cover your Christmas cake, it is definitely not the same as the ready roll icing you can buy from the supermarket. Due to the nature of flower paste it sets really hard, unlike sugar paste which stays nice and soft - a little kinder to your teeth!

The main reason why the two are so different is sugar paste is made with glycerine and flower paste is made with gum tragacanth. Just the difference in these two ingredients is enough to make the two pastes behave very differently.

If your sugar paste is looking a little dry then you can add some glycerine, but you would never add glycerine to flower paste as it would entirely change its use.


Top Tips for this Flower Paste:

  • Once all the ingredients are added and the consistency of the royal icing is changing, you may need to add a little bit of water, trex or icing sugar. 
  • Trex is also known as Crisco in the States.    
  • Once it starts to come together, use your hands to work the paste together.
  • Leave it over night in a sandwich bag and it should feel more stretchy.
  • Once you go back to it, it may look a little crumbly but keep working with it and it should become more pliable.
  • When adding the colour, work it into the middle first. If your hands get a little sticky, add some cornflour or trex to them.
  • It is best stored covered in trex, in a sandwich bag and then in a tupperware.
  • This flower paste also freezes well.

This would be a perfect celebration cake and one we would be very happy to receive.

A more gentle cake yet still with excellent sugar work and detail, this comes from Erica at Erica O'Brien Cake Design. Based in Connecticut but from New York City, Erica makes these amazing bespoke cakes for her clients. The watercolour in this cake is really impressive and looks great in the centre with the gold running through it. We also love the sugar flowers on the top tier, there aren't too many, but for this cake, it's the perfect amount. They provide a beautiful amount of colour and elegance to really finish this cake off.
